Menu Plan Monday
I've been doing menu plans for a while now, and they are really great, especially come Thursday, when I'm most always tired and out of inspiration.
Monday
B - egg and cheese sandwiches
L - tomato soup with leftover cheese tortelini
D - Roasted chicken, acorn squash, and cheddar potatoes, for dessert - zucchini muffins
Tuesday
B - acorn squash pancakes
L - egg salad sandwiches
D - Potato leek soup (with chicken broth made from roasted chicken) with bacon crumbles, pumpernickle bread
Wednesday
B - maple oatmeal with raisins
L - pb & j, fruit
D - Potluck at church - prepare a veggie dish (whatever looks good at Costco)
Thursday
B - yogurt and zucchini muffins
L - leftover soup
D - Chef's salad with bacon, hard boiled eggs, l/o chicken, cheese, veggies, etc., bread.
Friday
B - cinnamon toast, berry spinach smoothies
L - bean burritos
D - lenten tortilla soup (with Better Than Bouillan No Chicken Base) with beans, sqaush, corn, spinach, potatos, and tortilla chips.
Weekends - leftovers and some take-out!
Just by sticking to my menu, we have saved about $50 a week on groceries, and we waste much less food. If there is a lot of something left I freeze it and enjoy it another day.

Your tortilla soup sounds really good! Is there a specific recipe, or do you just toss all of those things together?

Yeah for MPM :) I love doing this now. It is so helpful- just like you said- at the end of the week. I'm usually done trying at that point, but if I have something picked out, I have no lack of inspiration.
XK - make stock with the Better than Bouillan, season with Mexican spices - I use McCormick which has no additives. I've added enchilada sauce or red chile sauce as well, but sometimes the kids don't like the added spice. Sautee chopped onion, garlic, and then whatever raw veggies you are adding in some oil. Then you throw it in to the pot with whatever else you want (can of tomatoes, beans, etc.), and it tastes a LOT like chicken tortilla soup. Especially once you add the tortilla chips and some chopped cilantro.
As for the minivan search, we've decided to wait until after Christmas to save money in this crappy economy. :)
Sounds yummy! And I love how you plan on using leftovers to rework them into a new meal.
