Menu Plan Monday - 2

I planned all of our dinners this Saturday before I went shopping, so I thought I would finish up the rest of our meals today. My friend Jamie wanted to know if I REALLY made all those meals and if I felt super duper about them all. YES and NO.

Last week's potato leek soup kind of bombed. I got lazy and didn't think I needed to peel any more potatoes, but I was wrong. The soup ended up being really watery. It was still flavorfu thanks to the delicious homemade crockpot chicken broth, and the bits of bacon helped a lot, but still. Watery. Eh.

And then, though they weren't on the plan, I decided to try out some no bake cookies, but they had to be lenten and also have no peanut butter (I suspect that James has a peanut allergy) and the only other nut butter I had was sunflower seed butter. While I didn't think they were completely awful, they did have a distinct sunflower seed taste which did not meld all that well with chocolate. Jason and Hannah said they were gross, while James just spit his out. I think otherwise it would have been a great recipe. Really.

So here is this week's plan (I was kind of bummed this morning when I didn't have a plan for breakfast):

Monday
D: Roast beef, baked potatoes, green salad

Tuesday
B: Blueberry muffins and yogurt
L: Turkey and cheese sandwiches
D: Tacos (with l/o beef), with avacado, tomato, cheese fixings, and rice & beans

Wednesday
B: Oatmeal with applesauce and cinnamon
L: L/O veggie tortilla soup from Friday
D: Potluck dish to share

Thursday
B:Cereal
L: Egg Salad Sandwiches
D: Chinese fried rice with salmon (canned salmon stirred into the rice)

Friday
B: Cinnamon Toast and Coconut Milk Hot Cocoa
L: Avacado Sandwiches
D: Rice and Bean Burritos

Since Mondays and Tuesdays seem to be my biggest cooking days, I have the hardest time keeping house. The sink fills up extra fast (no thanks to a broken dish washer) and I just can't seem to get to other areas of the house that need attention. Not to mention the mountains of laundry. Any ideas for me? As I become more and more of a do-it-yourself type, I'm losing lots of time! HELP!

I just made myself egg salad sangwiches this weekend. I had a huge craving for them.

i'm having bean and rice burritos this friday too! mine are blackbean and rice w/ avocado, (michael LOVES avocado!)

i've been inspired by you and the rest of the "menu-planners" and decided to have a menu plan SATURDAY, since i go grocery shopping on saturdays. tonight we're having BBQ tri-tip and southwestern salad. i barbequed the tri-tip last night when we were making buffalo burgers.

i only have to plan for mondays, tuesdays, fridays and saturdays because wednesday i go to family night after work (and michael stays home to study in quiet) thursday nights michael has class and eats in the deli, and sundays michael is at men's group.

as far as not having time, just pick your battles. if there's dirty dishes in the sink and you would rather snuggle with james, it's okay. they'll be there tomorrow. :)

I am never caught up with everything in the house! It seems like as soon as one section is clean and organized, all the others fall apart. At least this menu planning helps! It makes my day less stressful knowing that dinner is always taken care of!

I don't think a mother with young children will ever be caught up...I think we need to remember it's a CONSTANT cycle of a job that is maintenance. Our day for a cute, sweet, tidy, PERFECTLY guest-ready house will come...haha! Not that striving is bad, just not to get bunched up over it. I'm glad I'm saying this bc I needed the reminder!

The only people I know who have truly clean homes are retired people. Or those who hire help. Anyways, I think you need to give your mom and dad a major *hint hint* to give you their old dishwasher. I think having that again will help a lot. Other than that, I have no clue. At least you're making good food.

laundry magically does itself overnight at this house.... I mean, it still has to be folded, but really, most is done at night when I dont have to think about it.
either that or go all out & be one of those 'do all laundry on x day of the week' types
that works for some I know
I prefer the magic elves that do the work for me overnight
your meal menus sound fun... too bad I'm too lazy to make my own menus right now... lol
